Tonight I was inspired by indian recipe from my dear friend. It is super easy to make! And super irresistable to avoid:P
For Khajur Rolls you will need:
- 1 tin condensed milk
- 500 g (dates)
- 250 gm mixed nuts (badam, cashew, pista)
- 1/2 cup dessicated dry coconut
Method:
1. Cut dates in half;
2. Add condensed milk and mixed nuts in a non stick pan;
3. Now is the "hardest part"! cook on the slow flame, stirring all the time. Wooden spoon would work good here... Do not worry, dates will "melt" and become very soft & sticky:P It takes around 15 min to cook it.
4. Let it chill out for 5 min. By that time, prepare 3 separate baking paper pieces, covered with butter and dry coconuts.
5. Take a chunk of the mixture and roll into backing paper roll.
6. Chill our sweet rolls in the fridge for over night. Cut into slices just as it on the picture! And ready to go!
